Weekend Cooking

Today I made my own egg rolls. It was really cool. I've never made egg rolls before.. I think the best thing about making homemade egg rolls, is that you can put anything you want in them. They are very easy to make..
First, buy a package of egg roll wraps, on the inside of the package is the cooking instructions. You can use beef, chicken or pork, or just veggies.
I used some left over ground sausage I needed to use up, some celery, a can of ranch style beans, and some peas.
Meat mixture:
Combine 1tsp. corn starch; 1tsp. wine or sherry; and 1/4 tsp. salt with 1/2 cup (about 1/4 pound) of meat (beef, pork, or chicken). Stir fry mixture in 4 Tbsp peanut or salad oil (I used olive oil) until brown; remove and drain.
Vegetable mixture:
This recipe calls for carrots, celery and cabbage. But I used celery, peas and beans.
Shred 1/2 cup carrot; 1 cup celery; and 4 cups cabbage and cook about 10 sec in boiling water.
Drain vegetables and mix with meat mixture. Add 1 tsp sugar; 1 tsp. salt; 1 tsp. Sesame oil (I used olive oil); and 1/4 tsp pepper.
Divide mixture into equal portions per wrap.


Seal with egg white wash.


Deep fry egg rolls for 4 min or until golden brown. I have a deep fryer and set it to the highest setting, 350 degrees (I think).

In other news, my doctor released me to go back to work as tolerated after not finding much of anything on my MRI. He said it looks like my rotator cuff is slightly frayed, but that wouldn't cause the pain I'm in. He also said he could go in and clean up my rotator cuff, but it might not change anything, or it might help a little..

My workplace didn't accept my doctors release. The said I need a full release and can't come back till I have one. Looks like I don't get to go back to work...
