Peanut Butter Oatmeal Cookies

Peanut Butter Oatmeal Cookies

Prep: 30 minutes Bake:10 minutes per batch
Oven: 375 degrees F Makes: about 48 cookies
3/4 cup butter, softened
1/2 cup peanut butter
1 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour
2 cups rolled oats
1 cup chopped peanuts or semisweet chocolate pieces
( I used 1/2 a cup pecans and 1/2 a cup chocolate since thats allI had in my cupboard)

Preheat oven to 375. In large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed about 30 seconds or until combined. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats and peanuts.

Drop dough by rounded teaspoon 2 inches apart onto an ungreased cookie sheet. Bake about 10 minutes or until edges are light brown. Transfer to wire rack; cool.

If your looking for something easy to make with stuff you already have in your cupboard, these are the cookies for you!
They were very simple to make and very yummy!

Ooh, sounds delicious. I love peanut butter cookies, and even more than that, I love oatmeal cookies. Combination of the two? Perfection.
